Yummy Healthy Recipes.. and Husband Approved

These are two quick, easy, healthy, delicious recipes.. i had to share them b/c i know how hard it is to find geat recipes.

Mango Chicken Salad

l. Make vinaigrette: In blender, combine – 2/3 cup peanut oil
¼ cup white vinegar
1 Tbls. Dijon mustard
Process til blended. Add: 1/2 tsp minced garlic
Mango Chutney – ½ cup

2. Assemble Salad: Combine chicken
1/2 Chopped onion
1/3 cup roasted cashews
1 Mango

3. Pour half ot the dressing over the salad and mix. (I saved the other half of the vingerette and made more a few days later.. Rob liked it so much it was gone in 1 day!)
3. I served it plain but you can served it over lettuce.

Meatless Manicotti

Ingredients
2 cups (8 ounces) shredded part-skim mozzarella cheese
1 (16-ounce) carton fat-free cottage cheese
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed
1/4 cup (1 ounce) grated fresh Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (8-ounce) package manicotti (14 shells)
1 (26-ounce) jar fat-free tomato-basil pasta sauce
Cooking spray
1 cup water

Preheat oven to 375°.
Combine 1 1/2 cups mozzarella, cottage cheese, and the next 5 ingredients (through black pepper) in a medium bowl. Spoon about 3 tablespoons cheese mixture into each uncooked manicotti. Pour half of tomato-basil pasta sauce into a 13 x 9-inch baking dish coated with cooking spray. Arrange stuffed shells in a single layer over sauce, and top with the remaining sauce. Pour 1 cup water into dish. Sprinkle the remaining 1/2 cup mozzarella evenly over sauce. Cover tightly with foil. Bake at 375° for 1 hour or until shells are tender. Let stand 10 minutes before serving.
Yield 7 servings (2 manicotti per person) .. 328 calories (not bad for pasta main dish)

Ultimate Chip Cookie ( not so healthy but Rob really liked them)
Ingredients
3/4 cup butter, softened
3/4 cup granulated sugar
>3/4 cup firmly packed dark brown sugar
2 large eggs object
1 1/2 teaspoons vanilla extract
2 1/4 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
chocolate chips, white chocolate chips, heath chips ( I just added them to my liking)

Preparation
Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.
Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels. Drop by tablespoonfuls onto lightly greased baking sheets.
Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.
