Today is Rob's birthday(he does not get into birthdays like I do). However, I felt that he needed a cake. Rob LOVES ice cream cakes, so I made him an ice cream cake. It was actually really easy... unless you just had surgery. I used chocolate cool whip for the outside, 2 9-inch vanilla layer cakes, and chocolate fudge brownie (the reduced fat kind to make it a little healthier) ice cream. You can't really tell but the cool whip formed great peaks! (mom, you would be proud). Heres a tip, make sure you let the cakes cool for 10 mins then take them out of the pans, let the cakes cool completely, then do the ice cream let that freeze for a few hours, then frost with cool whip. this cake has a lot of stages to make it a success.
